Salmon and Garden Salad Recipe
Preparation time: 30 minutes
Cooking time: 8 minutes
1 cup peeled ripe avocado, diced
1 tablespoon fresh lemon juice
2 cups diced seedless cucumber
2 cups diced ripe cantaloupe
2 tablespoons fresh chives, snipped
4 whole chives
2 tablespoons fresh dill, chopped
4 spring dills
1 tablespoon shallot, chopped
3 tablespoons extra virgin olive oil
3 tablespoons fresh orange juice
2 teaspoons honey
2 teaspoons freshly grated orange zest
2 pounds center cut salmon fillet
1. The first set of salad is tossed lemon juice and sliced avocado. Put it in a bowl then add cantaloupe, cucumber, snipped chives, chopped dill and shallots. Toss the salad until it all well blended.
2. Combine orange juice, olive oil, honey and orange zest in a small bowl. Whisk together until it thickened. Sprinkle salt and pepper and toss the salad to mix it well.
3. For salmon marinade, mix extra olive oil, orange juice and honey. Brush mixture into the salmon and sprinkle salt and pepper to have additional taste.
4. Grease the grill rack and place the marinade salmon on grill. Flip fish each sides and cook for 10 minutes. Brush marinade every flip of each sides of salmon. Remove fish using spatula.
5. Slice salmons and put it on top of salad. Plate with presentation.
